This is a no-recipe recipe, a recipe without an ingredients list or steps. It invites you to improvise in the kitchen. This simple fried egg quesadilla makes as fine a light supper as it does a breakfast repast. Easy work: Melt some butter in a pan and gently cook a corn tortilla in it. Top the tortilla with grated Cheddar, a slice of deli ham or some cooked bacon if you want them, a little chopped cilantro or salsa or hot sauce, and another tortilla. Cook, flipping the quesadilla a few times, until it is crisp and golden and the cheese has melted into lace at the sides. Use a spatula to pull it out of the pan, and place it onto a cutting board to rest. Fry an egg in the now-empty pan with a little more butter, then cut the quesadilla into quarters, placing the egg on top. Top with cilantro and hot sauce or salsa. Easiest way to keep the cheese from falling out is to put the cheese on the tortilla that is in the pan, and then layer with the other fillings. Keep pressing on the top tortilla to get the cheese to melt. If you dice the ham (rather than using a whole slice), it allows the cheese to get oozy between the diced ham, which will seal to the top tortilla.

I love to crack an egg in a pan, break the yolk, put a corn tortilla on top, cook until set; then, flip the egg/tortilla so the egg is on top, sprinkle on some cheese and add another tortilla. Flip and cook the other side until toasted. The kids love these cheesy eggy tortillas as much as I do. I think I learned the method from Heidi Swanson many years ago.
