Chopped Greek Salad with Fresh Herbs

Ingredients
- 1medium seeded and diced cucumber (do not peel, about 2 cups)
- 2red bell peppers, diced (about 2 cups)
- 2large tomatoes, seeded and diced (about 3 cups)
- 1/3cup finely chopped red onion, from one red onion
- 1/2cup Greek green olives, pitted and quartered
- 1teaspoon salt
- 1/2teaspoon freshly ground black pepper
- 1/2teaspoon dried oregano
- 3tablespoons freshly squeezed juice from about 2 lemons
- 3tablespoons extra-virgin olive oil
- 1/4cup fresh chopped parsley
- 1/4cup fresh chopped dill
- 1/3cup crumbled feta
Directions
Combine all of the ingredients in a bowl and toss well. Serve immediately.
